When I was living in China I was living with Chinese people and our cook would very often prepare fish soup for dinner. And other people at the table would always offer me the head, which is the most prized part of the fish in China. And I was always like: oh, no no no, you can have it, you first, …but the head always ended up in my plate. So why is the head so prized and why is fish stock so healthy?
