This Videcipe is for a Barramundi Fish with a side of Pear & Celery Salad Ingredients: • Lemon juice from one fresh lemon • 1 tbs of olive oil • Salt • Pepper • Chili powder • Chili flakes • Fresh barramundi fish • 1-2 cups of chopped celery • 1 chopped pear (can be replaced with apples) • 1 cup of chopped red onion • 1 tbs of balsamic vinegrette • Balsamic glaze Equipment: • 1 grill pan • 1 glass or plastic container for marinating • 1 large salad bowl Instructions: 1. Squeeze the juice from one fresh lemon. Mix it in a glass or plastic container (large enough for your fish to fit in) with 1 tbs of olive oil, salt, pepper, chili powder and chili flakes. 2. Place barramundi fish into marinade mixture, and let sit for up to 2 hours. Meanwhile, preparation for the salad can begin. 3. Chop 2 celery stalks, half of a red onion, 1 fresh pear or apple, and mix in a bowl. Add 1 tbs of balsamic vinaigrette, and top with some balsamic glaze. Mix well and it's ready to serve. 4. Add olive oil to a grill pan and grill marinated fish at medium heat for 4-5 minutes each side or once golden brown. 5. Plate fish with salad and serve.
