Celeriac root fries are a tasty way to introduce a new vegetable to your family as well! Prep: 15 minutes Cook: 20 minutes 2 celeriac - celery root- 1 tbsp olive oil 1/2 tsp sea salt 1/2 tsp ground black pepper - divided - Pinch of paprika - divided - 6-8 fresh or thawed haddock fillets 2 egg whites 2 tbsp light mayonnaise 2 tsp dijon mustard 2 cups Panko bread crumbs 2 tbsp chopped fresh parsley leaves Preheat oven to 425°F and arrange the racks in the upper and lower thirds of the oven Peel celeriac and cut into 1/2-inch fry slices In a large bowl toss fries with oil, half each salt, pepper and paprika - see video. Spread out on parchment paper or foil lined baking sheet Bake on upper rack for 10 minutes Meanwhile, in a bowl whisk egg whites until very fluffy; blend in mayonnaise and dijon mustard. In a separate shallow bowl, stir in bread crumbs and parsley and remaining salt and pepper. Dip the fish into egg white mixture and coat in bread crumbs. Arrange fish on a parchment paper or foil lined baking sheet and bake for 10 minutes, or until fish flakes lightly when tested with a fork. Makes 6 - 8 servings 256 calories; 26 g protein; 5 g fat; 25 g carbohydrate; 3 g fibre; 451 mg sodium Enjoy!!
